How to improvise your own fillings, line the crust,
bake the quiche...


BAKING THE PASTRY / CRUST :

The choice will depend on your filling. Sugar crust will be only dedicated
to sweet tarts of course (it contains sugar). Shortcrust will be perfect
for sweet or salty preparations which are already rich in flavour and
ingredients because it is neutral. Puff pastry is the "top" pastry which is
good as much for sweet than for salty preparations.

The way of baking the crusts will depend on what you cook. Some recipes
will have you cook filling and crust together (which are the ones I prefer !).
Some will need to cook or pre-cook the pastry before (when the filling
can't be baked in oven). In this case, prick the lined pastry with a fork,
and put a sheet of non-stick paper on it, press on it and cover with dried
beans (this will avoid bubbles !). This is mostly necessary for puff pastry.
Short crust and sugar crust are more "heavy" pastries and won't rise this
much, moreover if you have made them yourself.

Pastries bake between 15 and 30 minutes, depending on thickness and oven...
Non-stick paper is also very helpfull when you bake the whole quiche :
put a sheet between the tin and the crust to make sure it won't stick !

PREPARING THE FILLING :

Basically, beat 4 to 6 eggs with salt and pepper, add 2 to 3 Tbspoons
sour cream and this is your base.

Meat, fish, cheese, bacon, vegetables, herbs, spices... Just make your
mixture the way you like ! As a general rule, it is better to bake the
ingredients before (moreover if you don't like vegetables crunchy !),
cut them in small pieces, and mix them with the eggs...
I love to spread hot mustard on the pastry before pouring the egg
preparation on it and I often add grated nutmeg to the egg preparation.

For instance, mix a green cooked vegetable (leftover ?) with ham (cooked
or cured, according to what you have in your fridge) ; or use some
chicken breast slices with fried potatoes... I personally love to use bacon
in the quiches which you can associate with green asparagus for example...
Never forget that herbs can be very good to give a special flavour ...
Just use anything you may like !

Usually bake for around 30 minutes in oven at 450°F....
