ONION
AND HERBS OMELETTE
Ingredients for 4 persons
: 6 to 8 eggs / 1 big brown onion / 1 bunch fresh
chives / a few blades of fresh parsley / 2 glasses milk / 2 Tbspoons
olive oil /
salt & pepper.
- Peel and mince the onion. Wash, dry and chop the chives and parsley.
- In a salad bowl, beat the eggs with salt & pepper ; add the milk
and beat
then add the chives and beat again. - Heat the olive oil and brown
the onion
in a non-stick pan. Add the onions to the eggs, mix and put back in
the pan.
- Cook the omelette in the pan while pulling the borders towards the
center
with a wooden spoon from time to time.
- When cooked at your convenience, spread the fresh chopped parsley
and serve right away…
