EGGS
AND PRAWNS IN A BRIOCHE
Ingredients for 4 persons : 4 individual brioches (shaped with a "hat"
if possible) / 6 eggs / 10 cl [3.5 fl oz] sour cream / 200 gr [7 oz]
shelled
prawns (or shrimps if you like) / 40 gr [1.5 oz] butter / paprika
/ fresh dill
/ salt & pepper
- Beat the eggs ; melt the butter in a saucepan. Pour the eggs in
the saucepan
with salt & pepper and whisk them right away on a very low flame for
a few minutes ; when cooked, they should form a smooth mixture.
Off flame, add the cream, the prawns and the chopped dill.
- Meanwhile, heat the brioches in preheated oven at 325°F / 160°C
for 5 minutes ;
open them and empty some of their inside soft part.
- Stuff them with the eggs, spread some paprika and top them with
their own "hat". Serve right away…
NB : prefer fresh prawns / shrimps if possible…. |
