SMALL PEAR FLANS WITH SPICES

Ingredients for 4 : 6 half pears in syrup with 10 cl [3 fl oz] of
their syrup / 100 gr [3.5 oz] sugar / 4 eggs / 40 gr [1.5 oz] cornstarch /
25 cl [8 fl oz] double cream / 1 badian anise star / 1 cinnamon stick /
1 clove / powdered cinnamon / butter for ramekins.

- Preheat oven at 210°C / 400°F ; butter 4 individual ramekins
(preferably rectangular)

- Strain the pears and reserve 10 cl [3 fl oz] of their syrup. Cut 4 halves
in small cubes and display them evenly into the ramekins.

- Heat the syrup and cream until almost boiling ; turn the flame off and
add the spices. Cover and let infuse for 15 minutes.
Then filter the cream through.

- Beat the eggs with the sugar and cornstarch ; then add the cream.
Pour on the pears and bake in oven for 30 minutes. Cut the left 2 pear
halves in 2, then into thin strips to top the flans with (fan-shaped).
Spread with a little cinnamon powder, and decorate with a small badian
star if you have any.

- Serve warm.
