SALT
COD GRATIN WITH OLIVES
Ingredients for 6 persons : 2 fillets salt cod / 900 gr [2 lbs] potatoes
/
2 eggs / 2 garlic cloves / 90 cl [2 pints] milk / 15 cl [5 fl oz]
olive oil /
1 Tbspoon plain flour / 3 Tbspoons Porto wine (or similar) / a few
pitted
black olives / salt & pepper
- Keep 30 cl [10 fl oz] of milk for later and pour the rest in a saucepan
;
put the salt cod in the milk and bring it to the boil ; simmer for
10-15 minutes, strain the cod and crush it roughly with a fork ;
bone it if necessary.
- Peel and crush the garlic cloves and mix them with the cod with
5 cl
[2 fl oz] olive oil. Let it marinate a few hours if you can.
- Peel and slice the potatoes ; fry them in 5 cl [2 fl oz] olive oil.
Crush them roughly with a fork and mix them to the cod. Display this
preparation in an oven dish.
- Mix together the flour and eggs, then add slowly the 30 cl milk
you
have kept, the rest of the olive oil, the Porto wine, salt and pepper.
Cover the cod preparation with this mixture and display the olives
on top.
- Let it get brown in preheated oven at 180°C / 350°F and serve
right away. |
