CHICKEN
AND TAPENADE "EN PAPILLOTE"
Ingredients for 4 people : 4 chicken breasts / 200 gr pitted black
olives / 2 garlic cloves / 2
Tbspoons capers / 15 cl [5 fl oz] olive oil / salt & pepper.
- Peel and crush the garlic cloves, crush the capers and the olives
; mix together.
Use a mixer if you wish, but do not blend too much. Slowly mix 2/3
of the olive oil to the mixture.
Add pepper.
- Cut the chicken breasts lengthwise in the center and fill them with
the tapenade.
- Display each breast on a double sheet of greaseproof paper. Spread
them with a little oil, then salt and pepper. Close the sheets and
bake for 20 minutes in preheated oven at 250°C/475°F.
- Serve in the papillotes, with green beans for instance.
Trick : you can make this dish more refined and original if you use
guinea fowl instead of chicken…. |
