MADELEINE CAKES

Here is our recipe for Madeleines :

Ingredients for about 20 Madeleines : 4 eggs / 125 gr [4 oz] soft unsalted
butter (+ some to butter the tins) / 125 gr [4 oz] sugar / 125 gr [4 oz] plain flour
/ 1 tspoon baking powder / the zest of 1 orange / 1 tspoon orange flower
water (replace with 1 Tbspoon lemon juice if you can't find it).
Nb : you need special madeleines tins which are shell-shaped cups..

- Separate the egg yolks from whites.

- Whisk the egg yolks with the sugar until the mixture gets clearer ;
incorporate the soft butter, the flour, then the baking powder.

- Add a pinch salt to the egg whites and beat them with an electric mixer
until they get frothy and thick ; incorporate them very gently to the mixture.

- Add , the orange flower water, then orange zests ; display this preparation
in the madeleine tins.

- Bake in oven for 5 minutes at 150°C / 300°F then for 15 minutes at 200°C / 400°F.

The madeleines will get golden brown ; take them out from their tins and
let them warm down.
